- Creates new recipes and food/product items (all formulations, ingredient and specifications required) to feature in regular and special menus for customers to support the market need
- Alter ingredients and recipe formulations to make existing menu options tastier for customers.
- Ensure process efficiency in operational and develop new processes or implement improvements in existing processes.
- Develop new ideas for process and product improvement, and ensure improvement compliance with organization's food, safety and budget standards
- Lead teams on product or process development. By prepare project plans describing project objectives, resources required and phases of execution.
- Develop all analytical, quality control metrics regarding operation, shelf life and storage
- Manage food industry issues that affect nutritional, food safety and regulatory compliance of global products
- Coordinate & manager the coordination of all Internal/External Customers Sensory Testing
- Work with Purchasing Department for new ingredient specifications which relate to new product launch. And manage all ingredient specifications and approvals whether purchased
- Develop relationship with Supplier’s R&D to cutting edge new technologies & transfer supplier’s expertise.
- Work with Purchasing Department for new equipment & small ware specification which relate to new product launch.
- Work with R&M Department for required equipment setting or new small ware specification which relate to new product launch.
- Explore & recommend new equipment innovation to ensure all equipment research and development complies with company standards
- Involve monitoring and ensuring process and equipment efficiency of operation
- Maintain hygienic conditions and conduct audits to assess food safety and quality compliance and reports discrepancies to management.
- Monitors customer feedback and project costs including labor, equipment and other resources involved, to assess the profits made by the new project.
- Evaluates existing equipment and procedures regularly for efficiency and recommends changes, such as upgraded equipment or implementing new technologies for procedural improvements.
- In testing new processes or products, maintains accurate paperwork describing the purpose of testing, and activities undertaken for testing such as procedures and equipment used.
- Coordinates with other departments for training employees and assists in the preparation of training materials.
- Keeping abreast of food industry practices and latest technologies in the field
- Evaluate Competitor activities to provide useful information.
- Ability to interact and partner closely with external exports for innovation and with other corporate departments
- Knowledge of raw material and ingredient functionality
- Be self-motivated, a strong team player and enable to work under pressure
- Excellent communication, interpersonal and leadership skills
- Good command of English and computer literacy
- Bachelor Degree or above in Food technology, Food Science, Biotechnology, Agro-Industry or related field
- At least 10 years experience in Research and Develop new product for food Services with a track record of innovation, hotel or retail industry would be advantage
